INGREDIENTS

¾ cup mashed banana (approx. 2 large over-ripe ones)
3 large free range eggs
2 Tbsp maple syrup or honey
1 tsp apple cider vinegar
1 tsp vanilla extract
Finely grated zest of one lemon or orange
1 ½ cups almond meal
½ tsp baking powder
½ tsp baking soda
1 cup blueberries, fresh or frozen

 

 
 

1. Preheat oven to 180 degrees. Line a square brownie tin with baking paper or a 12-hole muffin tin with paper cases.
2. Whisk together the mashed banana, eggs, maple syrup, cider vinegar, vanilla and lemon zest until smooth.
3. Add ground almonds, baking powder, soda and a pinch of fine pink salt. Mix until just combined.
4. Gently fold through the berries. No need to defrost if frozen.
5. Spoon into tin, top each one with a couple of slices of banana and bake for 20-25 mins or until skewer is inserted and comes out clean. Store in an airtight container for up to 3 days.

This works great with any kind of berry or mango instead. I’ve also made this using choc chips!
