INGREDIENTS

1 chicken breast
1 cup polenta
1 egg
Olive oil

 

 
 

1. Slice chicken breast into small pieces.
2. Whisk egg and pour into a bowl.
3. Pour polenta into another bowl. You can add 1 heaped tsp of dried mixed Italian herbs if you like.
4. Dip chicken in egg followed by polenta.
5. Heat oil in frying pan over medium heat. Cook chicken on both sides til golden.
