Peanut Butter Jam Drops

 

 
 
 
 

 
 
 

INGREDIENTS

100g unsalted butter, softened
½ cup peanut butter
3/4 cup brown sugar
1 tsp vanilla extract
1 egg
1 ¼ cups plain gf flour
½ tsp bicarb soda
½ cup roasted and salted peanuts, finely chopped (you can get packets of crushed peanuts from the baking aisle of the supermarket)
½ cup jam of your choice or even make a chia jam

 

 
 

1. Preheat oven to 160 and line two baking trays. Place butter, peanut butter and brown sugar in a bowl and mix with electric mixers for 3 minutes until pale and creamy.
2. Add the egg and vanilla and beat well to combine.
3. Add the flour, bicarb and peanuts and mix to combine.
4. Place the bowl of mixture in the fridge for 30 minutes to firm up.
5. Roll tablespoons of dough into balls and place on baking tray. Flatten slightly and press a finger into the centre of each biscuit.
6. Fill the indent with jam and bake for 25 minutes or until golden. Store in an airtight container in the pantry. They also freeze really well.
