Sweet Potato Brownies

 

INGREDIENTS


1/2 cup coconut flour
2 Tbsp arrowroot (tapioca flour). From the baking aisle of the supermarket or your local health food/bulk food shop
2 tsp bicarb
1/2 cup cacao
1 tsp vanilla extract
1/2 cup or honey or maple
5 eggs
1/4 cup melted coconut oil
1 cup steamed and mashed sweet potato


INSTRUCTIONS

  1. Whizz til smooth.

  2. Pour into a square, lined baking tray.

  3. I often make up one of these, cut it into little squares, freeze it then pop it into Eadie’s lunchbox.

  4. I iced this one with Vego spread which is like a vegan Nutella from Happy Frog because it was for a party.
